Propably. I'd suspect something in /usr/share/mime or ~/.local/share/mime.

I haven't dug into this too deeply but to me it seems: "undocumented" -
maybe, "secret" - I don't think so. My bet is: firefox simply uses the
MIME-type mappings of the system.

Well, it asks you what to to and lets you select the application *you*
prefer.
But it's not firefox' job to let you manipulate the MIME-type mappings
of the system.
