By default, the Ubuntu server versions don't install a GUI (as you
probably have noticed by now).
If you only need a few gui apps, simply install them. The packet manager
should take care of pulling in all dependencies.
If you really want a GUI setup like the desktop edition, install one of
the .?ubuntu-desktop packages. For example, issuing
aptitude search '.?ubuntu-desktop'
will show you the packages that can be used to install the different GUI
flavours (Gnome, KDE, ...).
