That is not correct. I have loaded the server edition several times,
then loaded ubuntu-desktop (gnome) and xubuntu-desktop (xfce) afterward.
All it takes is to establish the internet connection and then type the
correct command for what you want. 

  > sudo apt-get install ubuntu-desktop

will most certainly get you the gnome desktop on the server.
