It may not be the best alternative to do it, but you can remove the text
under the icons. Evince, though, doesn't have this feature. It'll be
necessary to do it in the system preferences:

*System > Preferences > Appearence
*Click on the *Interface *tab
Select *Icons Only *or *Just Icons* in the select box.
This will affect all the aplications. I like it anyway. Someone else will
probably know how to do it for Evince only
