You can make some adjustments via: System|Preferences|Appearance|Fonts.
Unfortunately with 8.10 the xorg is quite different than 8.04.1 where
you could use displayconfig-gtk and even import a Windows .inf file for
your monitor - see:

https://bugs.launchpad.net/ubuntu/+source/displayconfig-gtk/+bug/286998
https://wiki.ubuntu.com/X/DisplayConfigGtk

Specifically what is the Samsung 17 monitor model number? Do you have an
.inf file for it in Windows? If so, I'd really recommend installing
8.04.1 instead of 8.10. That way you can use displayconfig-gtk and
easily modify your /etc/X11/xorg.conf file to suit your monitor and
machine. IMO the new xorg in 8.10 is just a little too much 'plug&pray'
for me; works well for some, doesn't work at all for others, and seems
(again in my opinion) is just a little too new/untested for everyman's use.
