I run without ubuntu-desktop on two of my primary systems without any
problems at all. The only time that I reload it is when I perform a
distro release upgrade. I have 3 others that I do keep ubuntu-desktop
on, and so it's quite easy to see if the one without it doesn't get
updated with regular releases.

It's quite safe to use your system without ubuntu-desktop (IMO), just
remember to reinstall it before you do a distro upgrade (Gutsy to Hardy
etc):

sudo apt-get install --reinstall ubuntu-desktop
sudo apt-get update
sudo apt-get upgrade

and then do your distro upgrade.
