heh heh heh. Solved. On the Config - Encode - Encoder tab, set the 
Encode File Format filed to "~/Music/%A/%d/%n--%a.%x" which ends up with:
~/Music/AlbumArtist/Discname/Track Name--Track Artist.mp3
