I use a simple text based program called 'sysv-rc-conf' to turn off 
uneccisary services. As for what is actually neccisary for you, that is 
going to depend on your system and your individual needs. You may also 
want to check under "System -> Preferences -> Sessions" in GNOME to turn 
off any uneeded GNOME applets.
