Sigh.  Karl strikes again.

For the OP:  Close all your apps.  Use your System Menu (not the one in
OpenOffice, the Gnome/Nautilus System Menu), go to System -->
Preferences --> Default Printer.  Click once on your HP, click the "Set
Default" button, click the "Close" button.  Open OpenOffice and try to
print, did your preference stick?

You can also go to System --> Administration --> Printing and in there
find your HP, look for the little "Make Default" button on the
"Settings" tab and use that to make it the system-wide default.
