Ekiga and Evolution-data-server (!)

It just kills me to think that Ekiga depends on Evolution's address book. What a PITA! Seriously!
Can I edit the Ekiga's dependency on Evolution manually in the .deb, repackage it and have the address book feature just blither? TBH, I do not want Evolution's address book feature and I am happy without it even if Ekiga spits out couple of errors here and there in the console, it's really not an issue for me.
I have heard that I can edit the .deb manually to remove the dependency by editing the control file but I quiet stuck where it comes to repackage the files after editing it and saving it.
Does anyone know how to do it?
Any sort of packaging guides/walkthroughs would be great! Many thanks!
