There are two ways to approach this:
1. Use the open driver. Setting up dual-head this way is described
in the Ubuntu 7.10 release notes, which provide two documentation

The first documentation page talks about Intel video cards, but
that's okay, the new radeon driver uses the same configuration
mechanism. Perhaps some details may be different (e.g. output
names).
I think the wiki.debian.org one is clearer.
2. Use the restricted driver. I know nothing about it.

Okay, so way (2) doesn't work for you. That still leaves way (1).

Oh, I didn't notice this one. It seems to be incredibly broken, at
least on my hardware. I'll go report some bugs.

Ask again here, if the documentation I pointed at seems too obscure.
Also, we could make the advice more concrete if you posted the output of
the 'xrandr' utility.
