I guess you didn't run Feisty........
The UUID is a method of identifying a file system by the UUID rather than a
partition number.
Thus, when you add or delete partitions, which changes your partition numbers,
the UUID for a particular file system doesn't change and the mount will still
occur correctly.
Might be a pain in some cases, but it sure makes reconfiguring partitions a
bit easier.
