ffmpeg2theora is good for these conversions (it will convert video to
Ogg Theora and sound to Ogg Vorbis):

sudo aptitude install ffmpeg2theora
ffmpeg2theora file.au

I tested it on http://www.nch.com.au/acm/sample.au and it worked fine.
