Various certificates

Every time I send an email, I'm reminded of the phony "localhost"
certificates on my Dapper-based mail server. It's not a failure- in fact
it's a great thing that it MAKES them so I can have TLS/SSL/Etc. I'd
just like to roll my own, but I don't quite understand the process.
Is there a howto for the "root" certificate? I've seen only
vendor-specific versions and most were kinda "follow along", not
explaining the process.
Anyone have a favorite?
