Actually, simply running
sudo mke2fs /dev/sdb1
should do the trick just as well as running parted, unless, of course,
repartitioning of the drive is necessary. If you want to keep the
single partition you have, mke2fs from the command line should be the
only required step other than checking mount for the correct device to
reformat.
Disclaimer: tested, but not on ufs formatted drives.
