What version or Ubuntu are you using?

For 6.06:
System -> Preferences -> Removable Drives and Media

Select the "Multimedia" tab
Uncheck the "Play audio CD discs when inserted" (or change the command
if you want it to do something else)

May be similar for 6.10, not sure.
