how to hide dot-files in Open/Save/Save As windows?

Nautilus:
Edit|Preferences|Views - unclick 'Show hidden and backup files'

That should also fix the applications showing hidden files as well. If
not, Darryl's suggestion will work; which by the way is necessary to
'unhide' files/directories when you need to, so it's a good tip to learn.
