Permanent problems with fonts especially on Ubuntu

Where can I get complete description about X server and its parts
related to fonts, because nearly each linux-box behaviors differently
and I am getting pissed off from that state.

Our application is generated with ancient Kylix 3 with ISO-8859-1
German version and our application looks different on different
linuxes. Personally I have two boxes with:

1 PC - Ubuntu 7.04 i386
1 PC - Ubuntu 7.04 AMD64
and
2 PC - Ubuntu 7.04 i386

on my second PC look many fonts different, but on 1st PC with i386 is
OK. Afterwards on 1st PC with AMD64 installation all texts which
contains "umlaute" (special german characters) are not shown
correctly.

I have checked:

/etc/X11/xorg.conf 's section with FontPath
/etc/X11/fonts/*.alias files
/usr/share/fonts/X11/*

but all installations contain the same state.

What else is related to fonts?
