HELP Ubuntu server install

[Kit Goins]

I tried installing Ubuntu 7.04 server edition
today, as a dual-boot machine along with win XP
 but when I rebooted...and I selected ubuntu,
it booted to a text-based login.

Then i couldn't login as root...only as the user i setup
during install, and still only had a text-based system.
What happened to the GUI desktop?

why couldn't I see a GUI desktop...and what's the default
root password?

Plus how do you uninstall GRUB after deleting partitions
in windows XP partition manager?
