New monitor only displays 800x600

These two bits:

...look a bit contradictory to me, but then again who am I to judge? ;)

Your Xorg.conf monitor config looks a little sparse. Try running sudo
dpkg-reconfigure xserver-xorg, go through the motions (select your
nvidia driver, not nv) and select what fits your monitor best.
