preferred applications

The simplest thing to do is to right click on a file in Nautilus, select
properties, then select the tab that says "open with" and select the
program you want to use.

In the case of a text file, you'll be given a list of your installed
text editors. You can add one from the list of those displayed. Or if
it's not there, click the "add" button to get a list of all your apps.
If it's *still* missing, you can use the "custom command" option shown
at the bottom.

I've always found that "preferred applications" thingy rather odd. It
does seem like there should be a lot more there.
