Unable to mount /boot anymore

I met a similar situation twice. Also, after trying Gutsy in another partition.

You can try and edit /boot/grub/menu.lst and use /dev/sda1
explicitly instead of UUID.
For me it worked.
BUT DO IT AT YOUR OWN RISK    :)

PS I don't think you need to fsck it.
