As Brian said it is possible. I've done it with 3 separate cards.
Unless you are really lucky/knowledgeable it can be an absolute pain.
The best bet is to get each of the cards working on their own, so you're
sure you have the correct drivers for each. I would then get the dual
head card working first before trying to add the other. Remember to you
have to have the same colour depth for all the cards. I'd also stick
with a low (800X600) resolution until all three are working.
