Thanks everybody.  I have sorted it out.  I did

apt-get remove --purge xserver-xorg
apt-get install xserver-xorg

This seems to configure X without asking me any questions, it just works!

I then ended up restarting my PC, trying to just restart X did not
work for some reason.
