xubuntu-desktop is just a metapackage. See

apt-cache show xubuntu-desktop

In other words, it's a package consisting of dependencies, which
include gnumeric and abiword.  Removing the metapackage will not break
anything - it is just useful to have on a hard-drive install if you are
upgrading to the next Ubuntu/Xubuntu release ( say, dapper to edgy ).
