That's exactly what happens when you use that 'start a second session'
option... I don't have my ubuntu install in front of me for the exact
wording, but it's already implemented for you. That will give you
another session the same as what you are running.
Alternatively you could flip to a console via cntrl-alt-f1, log in,
and run startx :1 etc... I run my freevo install this way, with
freevo using (in this case) a completely different video card as well
as a separate x session on cntrl-alt-f8
If you want multiple gdms (log in screens) there would be additional
setup required I've not done before, but it's certainly doable.
