Thanks to all for your help.

It turns out that the problem was a combination of things between the 
video driver, video card, and monitor:

1) nVidia told us that the driver that we were using (version 1.0-9755, 
from a fresh install of Ubuntu 7.04) was no longer supported.  
Apparently the version of video driver we were using is incapable of 
putting the video card into 2560x1600, even though nVidia claimed that 
the Quadro FX 550 was capable of this resolution.

2) The Dell 3007WFP-HC apparently doesn't have a scaler, so if your 
video card's maximum resolution isn't directly supported by the monitor, 
then the monitor will not scale the input.  You have to choose another, 
lower resolution.

3) From (1) and (2) above, 1280x800 was the best resolution we could 
get.  I.e. 1280x800 was the greatest common denominator possible.

By this time I had spent a considerable amount of time combing the net 
and trying different options to make this work, and my boss was wanting 
me to move on.  So since a new video card would be cheaper than my time, 
the solution we chose was to buy a new e-GeForce 7600 GS -- "It Just 
Works" (tm).

This monitor is, by the way, very, very sweet.  :)

My boss says we don't have the money to buy me one.  :(
