Server-Workstation Combo?

I'm a recent refugee from OpenSuSE. In a few hours, I start installing
Ubuntu on my one and only server which has up to now done double duty as
a server and a workstation. I would like to continue that arrangement
but I read on the download page that the Ubuntu CD does not install a
gui. I'm hoping that there is a fairly straightforward procedure to
adding a gui (Gnome) after the server install. Is there such a procedure
 and, if so, where can I find it? Thanks for any pointers.
