Check in the xorg.conf and remove any resolution-specifying lines such
as:
 Modes           "1600x1200" "1280x1024" "1152x864" "1024x768" "800x600"
"720x400" "640x480"

I don't know if this'll help you, but it's solved problems I've had with
resolution limitation.

Also, are sure you're using the restricted driver for nvidia cards?
(probably since nvidia-settings is working, but it's worth double
checking).
