GStreamer user documentation?

I went to the GStreamer website[1] looking for user documentation and
strangely there is none (unless I'm missing something).

Seriously! None. Zero. Zilch. Nada.
Isn't that rather odd?
All the documentation is for coders only.
What I'm looking for I've found (in bits and pieces) all over the place
but I'd like to know where this all *originates* from.
For example....
I'm in GNOME and want to edit my audio profiles. In this case I'm
creating a new one with the following pipeline:
audio/x-raw-int,rate=44100,channels=2 ! lame name=enc preset=1003 !
xingmux ! id3v2mux
Who provided that original documentation to begin with and where can I
find it. My logic dictates it comes from the GStreamer folks but as I
stated there is nothing on their website.
If it's installed with GStreamer, I've not been able to find it.
