Default editor in GNOME?

I read the following:
http://tips.webdesign10.com/how-to-change-the-default-text-editor-on-ubuntu-with-nautilus
Which gives a way to customize which editor is used for different file
types. But, I'd like to specify gvim as my *default* editor w/o having
to specify every MIME type. Anyone know how to do that short of
symlinking gedit?
