Just a shot in the dark, but I've had these sort of problems before  
when the monitor is reporting scan ranges (DCC) that wont allow the  
video card to display the higher resolutions.  The way around it is  
to tell the X server to ignore DCC and manually tweak the scan  
ranges.  No idea if this happens if you use DVI inputs but it  
certainly happens with 15-pin DSUB (VGA).  Another option could be a  
manual mode line (there's plenty of caluculators online for these).

Have a look through the /var/log/Xorg.0.log (IIRC) file which will  
tell you exactly what happened during startup and why the higher  
resolutions were skipped.
