How about:
$> perl -p -i.bak -e "s/Linux/GNU\/Linux/g;" *.txt

to replace all "Linux" occurrences with "GNU/Linux" in all .txt files in 
the current directory. The original files will be backed up with .bak 
extension. If all goes well, you can delete the backup files.
