The Live CD graphical installer, IIRC, doesn't do RAID for either Dapper or 
Edgy.

This is how you do it.  Install ubuntu-desktop or kubuntu-desktop as you 
prefer using apt or aptitude on the command line, e.g.:

sudo apt-get install kubuntu-desktop
