According to google to block google chat you just disable DNS for
chatenabled.mail.google.com by making it return 127.0.0.1 [0]

ways around it?
VPN or run Gmail on a remote machine and use SSH with X forwarding maybe?

However it is likely your admin has probably blocked all those types
of techniques as well.

What OS are you using at school? Linux is likely to be more likely to
work as on Linux you don't need to block software like you do on
windows because applications can only do what you can do anyway

Does your school run Ubuntu?
