One more option - I thought Red Hat's kickstart was ported to Ubuntu
courtesy of Perens' work on Progeny. system-config-kickstart seems
available from one of the repos. run 

sudo apt-cache show system-config-kickstart

for more info. I haven't personally tried it on Ubuntu, so ymmv.
