evolution-data-server has very little to do with Evolution, and does not
require Evolution to be installed. The name is largely a historical
artifact since it started out with Evolution, but has since been made
more general and separated off. Think of it as gnome-data-server and
you'll be about right.
To the OP though - why do you want rid of Evolution? Even if you're not
using it, is the disk space really worth the hassle?
