how to install server?

how can I install a "server" flavor ubuntu?
I wouldn't need sound, video, x11, kde or gnome
or anything like that.

debootstrap would be nice, but a normal bootstrap
includes stuff like alsa, so I'm not sure if that
is the best option.

also I'm running (k)ubuntu dapper on my laptop, have
xenified it and the server I want to set up will
be one of those xen "domU" units.

Any suggestions?
