I've been using dual head with nVidia cards for about 4 years now
through various versions of XFree and Xorg. One had dual 15 pin
analog connectors, and my current one has a dvi and analog connector,
they work fine (and transparently to Xorg).
My current xorg.conf is online.

The only thing I'd say take note of is the Composite configurations
that I use, they're for newer features found in Xorg 7 and may cause
havoc on older versions or older cards.
