What's going to break, if vanilla kernel is used?

I don't know much about kernel, but I recently had to compile mine to
get my iPod working (it's still not working, thanks for asking) and I do
have a little piece of wisdom:

You can have more than one kernel installed at the time. Don't uninstall
your current kernel, just install your compiled one in addition. If your
compiled one doesn't work, reboot and use the old one!!

That said, I think your best bet is to try the vanilla kernel and see
for yourself what breaks.
