copying partitions should be just fine.

Actually not. AFAIK the only important place to check is /etc/fstab. And
of course boot loader issues like you already experienced ;-)

Just concentrate on the two problems at hand, grub configuration and
fstab. Perhaps use a LiveCD to repair manually. For grub it might be
useful to know that you can temporarily edit the config while in the
boot menu by pressing "e" on a selected line.
