Maybe exiflow ( http://sf.net/projects/exiflow ) can help you. It uses
the already mentioned Exiftool to do the dirty work and, among other
things, tries to gate information between gthumb and EXIF data.

So it should enable you to edit the dates in gthumb and then run exigate
(from command line or GUI) to update the exif data.

Backdraws: There is only an alpha version, and to be honest, I'm biased.
