Evolution date

Hello,
How do I change the Evolution date format ?
Or better yet, the whole Ubuntu/Gnome date format ?
I want to use the nice ISO international date YYYY-MM-DD, and 24hs day,
not two 12hs am/pm. Where is all that configured ?
