Video capture, hints wanted...

Dear all,

can someone point me to the appropriate web resources to start 
practicing with video capturing?

To be precise, my first simple need is to convert Video 8 (aka 8mm) 
video tapes to XVid or something like that. I don't need menus, 
subtitles, or such: I just want to save those tapes to some format 
suitable to be burned on a CD or DVD.

I just have some practice using dvd:rip to convert video DVD to XVid, 
but sometimes I was also able to convert video DVD to VCD.

Any suggestion will be very appreciated.
