delete "Open with" program for a file type

File search will show hidden files if you first click the "Select More
Options" triangle thingy,  click on the combo box, and select "Show
hidden and Backup files"

In the gedit file dialog (and any gnome file dialog) right clicking in
the right pane should bring up a menu with one of the options being
"Show hidden files"
