Most likely due to your USB headset not being the primary device (hw:0). 
In GNOME you can use System> Preferences> Sound> Set default sound card 
and the Volume control (mixer) applet in the notification area. 
Personally it's easier to use alsamixer from a terminal window.

You can find the device number for your USB headset via:

$ cat /proc/asound/cards
