Personally, I've found dovecot to be absolute simplicity and I'm very happy
with it.

Anyway, back to the problem.

1)  port 111??  Imap is generally on port 143.  Messing with non-standard
ports is liable to get you in trouble - especially if you've never had it
work on the standard port first.

2) Use telnet:  telnet localhost 111
   and: telnet localhost 143

If neither responds, you aren't listening on either of those ports.  As
someone else suggested, imap servers are usually started out of (x)inetd.
