The ubuntu-desktop package is a metapackage - removing it won't do any
harm - when you upgrade to the next version of Ubuntu you will want to
reinstall it first though, to avoid any issues with the dist-upgrade.

A metapackage contains only a list of dependencies - not any actual
packages or software as such.
