Grub question

Is there way in grub to specify a default kernel such that it always
remains the default kernel, despite updates and other kernels
introduced via synaptic?

My limited understanding suggests that the default is either the kernel
in the first stanza or, if specified, is stanza number N.  But
introducing new kernels automatically changes this.

But I'm sure I've missed something
