This is Linux - we don't reinstall. We fix what's wrong :)

Remove /etc/rc2.d/S13gdm and X will never start unless you ask for it.
Bring autostart back with a symbolic link:
cd /etc/rc2.d && ln -s ../init.d/gdm S13gdm

Remove X with apt-get if disk space is precious
